Delicious Banana Bread
  • 1 box yellow cake mix
  • 1 stick butter-melted
  • 1/3 cup oil
  • 1/2 cup sugar
  • 3 eggs, beaten
  • 3 large bananas, mashed
  • 1 tsp. vanilla
  • 1 cup chopped pecans, optional
  • 1 cup raisins, optional
Mix butter, oil, sugar and eggs together. Add cake mix; beat. Add pecans and raisins; add mashed bananas. Pour into greased and floured loaf pans (2). Bake at 325 degrees until browned on top, about 45 minutes to 1 hour.



Hash Brown Ham Quiche
    
  • 3 cups frozen shredded hash brown potatoes, thawed
  • 1/4 cup butter, melted, divided
  • 1 cup (4 ounces) shredded Swiss cheese
  • 1 cup (4 ounces) shredded pepper Jack cheese (I use Colby Jack cheese)
  • 1 cup diced fully cooked ham
  • 2 eggs
  • 1/2 cup heavy whipping cream
  • 1/4 tsp. seasoned salt or regular salt
Press hash browns between paper towels to remove excess moisture. Grease a 9-in. pie plate with 2 tsps. butter. Press hash browns onto the bottom and up the sides of plate. Drizzle with remaining butter. Bake, uncovered, at 425 degrees for 20-25 minutes or until edges are browned.

Combine cheeses and ham; spoon into the crust. In a bowl, beat the eggs, cream and salt; pour over ham.

Reduce the heat to 350 degrees. Bake uncovered, for 20 -25 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before cutting. Yield: 6 servings.
